Baked Salmon with Turmeric Mango Salsa


From the Skinny Chef: Mango mixes with the astringent flavor of turmeric for a savory sweet and sour salsa. It’s the ideal topping for the rich taste of salmon and mango adds plenty of vitamin C along with the amazing healing properties of turmeric.

Serves 4

Ingredients:
1 mango, peeled and diced
1/2 cup diced red onion (about 1/2 a large onion)
1 tablespoon finely chopped jalapeno
1 tablespoon lime juice
1/3 cup roughly chopped cilantro leaves
1 teaspoon turmeric
1 teaspoon salt
4 filets 6 ounces filets of salmon, skin on
2 teaspoons honey
1 teaspoon Dijon mustard
2 tablespoons balsamic
1 tablespoon olive oil
2 medium mangos
1/2 red onion
2 jalapenos, deseeded, minced
2 limes
1/4 cup chopped cilantro


Mix the mango, red onion, jalapeno, lime juice, cilantro, turmeric and half the salt in a medium bowl.  Set aside

Preheat oven to 375° F.  Spray a 9 X 12-inch baking dish with cooking spray.  Place salmon, skin side down in dish and sprinkle with the remaining salt.

In a medium bowl, whisk honey, mustard, balsamic until smooth.  Gradually mix in olive oil.  Pour half the dressing over the salmon.  Bake uncovered 15-18 minutes until the fish breaks away easily when pressed with a fork but is still moist and pinkish red inside.

Transfer to a serving platter or large plates and top with remaining dressing and the salsa.  Serve immediately.
