Recipe:
Baked Mac and Cheese
(Best for Pitta, Vata)
PITTA and VATA: This comfort food can satisfy your craving for sweets even if there isn’t actual sugar on top.
KAPHA: Unless chili peppers are added liberally to this recipe this dish can make you feel sluggishness.
PEPPER FOR WEIGHT LOSS
For all doshas, a little ground black pepper stimulates digestion and provides a bit of pungency to balance the coolness of this recipe.
Serves: 4
Ingredients:
1 12-ounce package whole-wheat macaroni
2 tablespoons Ghee, melted
2 tablespoons whole wheat flour
1 ½ cups non-fat, skim milk or plain soy milk
3 cups reduced-fat shredded cheddar cheese
½ teaspoon salt
¼ teaspoon freshly ground pepper
½ cup seasoned Italian breadcrumbs
Non-stick cooking spray
Directions:
In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked. Set aside. Preheat oven to 350° F.
Warm the ghee in a large oven-proof skillet over medium heat. Add the flour and cook 2-3 minutes stirring constantly until a smooth paste forms. Whisk in the skim or soy milk. Increase the heat to high, whisking continuously 1-2 minutes until a thick sauce forms.
Reduce the heat to medium and add the cheese. Stir 1-2 minutes until the cheese is melted. Add the pasta, salt, and pepper. Sprinkle with breadcrumbs. Coat the top of the crumbs with a thin layer of cooking spray.
Slide the skillet into the oven and bake uncovered for 25-30 minutes until the breadcrumbs are golden and the cheese is bubbly. Serve immediately.
