Recipe: Whole Grain Pasta Tossed with Zucchini, Sage, and Walnuts
Juicy zucchini is natural hydrator that also adds lots of fiber to your diet. Walnuts are high in Omega-3 fatty acids and whole wheat pasta from our Skinny Chef makes this dish hearty and satisfying.
Serves 4
2 tablespoons olive oil
4 cloves garlic, minced
2 medium zucchini, cut into 1-inch chunks
1/4 teaspoon salt
6 large sage leaves
1/2 cup fat-free, reduced sodium chicken stock
2 tablespoons low-fat cream cheese
1 pound whole wheat pasta, cooked according to the package instructions
1/2 cup chopped walnuts
1/2 cup grated Parmesan or Pecorino
1/2 teaspoon freshly grated black pepper
Directions:
Heat a large skillet over high heat. Add the oil. When the oil is hot, add the zucchini and sprinkle with salt. Cook approximately 5-6 minutes, until the zucchini becomes tender. Add garlic and sage and cook an additional minute. Add chicken stock and cream cheese. Simmer 2 minutes until the zucchini is fork tender.
Toss in pasta, walnuts, grated cheese, and black pepper. Serve immediately.
