Recipe: Turkey Bacon Club Sandwich

This low-fat treat is ideal for your next brunch or movie night.  Our Skinny Chef uses turkey bacon and creamy yogurt-flavored mayo to cut over half the fat without losing flavor.  Tucking in spinach adds a super food boost to this classic and provides vitamin C, folate, and Vitamin K that iceberg lettuce can’t deliver.

Serves 4

2 whole grain heros, or 4 whole grain sandwich rolls
2 Tbsp Dijon mustard
2 Tbsp honey
2 Tbsp ground flax meal
1/4 cup pink grapefruit sections
1/4 cup plain non-fat yogurt
2 Tbsp low-fat mayo
1 pound lean sliced turkey breast deli meat
8 ripe, baby plum tomatoes (about 1 pound)
2 cups baby spinach
1 8-ounce package of sulfite-free turkey bacon, cooked according to the package instructions
4-8 cocktail sticks

Directions

Slice each hero or roll into three even horizontal slices.  Toast the bread.
In a small bowl, mix the mustard, honey, flax, and grapefruit.  In another small bowl, mix the mayo and yogurt.  Spread a thick layer of the honey mustard mixture on top of the bottom slice for each sandwich.  Distribute half the bacon slices, turkey, spinach, and tomato.  Press another slice of bread on top.

Spread a layer of the yogurt mayo on the second slice and repeat with remaining bacon slices, turkey, spinach, and tomato.  Top with remaining bread slice.  Cut in half or into triangles and skewer cocktail sticks.  Serve immediately.
