Recipe: Black Bean and Turkey Chili



Who doesn’t love chili with all the fixings?  But this is a feel good meal from our Skinny Chef that doesn’t have all the fat and calories of traditional chili recipes.  Turkey packs in the protein with a mere .5 gram of fat per serving!  So go ahead and sprinkle on some cheese.  In the mood for a burrito?  Wrap up 1 cup of the chili in a whole grain tortilla.

Serves 6-8

Chipotle Topping
1 cup plain non-fat yogurt
2 tablespoons canned chipotle chili in adobo sauce, chopped

Salsa
1 cup fresh corn kernels or canned corn
1 jalapeno, seeded and minced
1 cup grapefruit segments
1/2 cup fresh cilantro leaves
1/4 cup lime juice
1/2 tsp salt

Ingredients
1 pound lean, white meat ground turkey
1 tsp salt
1/4 tsp freshly ground black pepper
1 small onion, chopped
3 cloves of garlic chopped
2 Tbsp mild chili powder
2 Tbsp ground cumin
1 cinnamon stick
1 28-ounce can of diced tomatoes
1 15-ounce can reduced-sodium beef broth
1 15 ounce can black beans, drained and rinsed
1/2 cup ground flax meal
2 cups baby spinach, chopped
1 cup shredded reduced-fat cheddar
1 bag whole grain chips (our Skinny Chef loves Garden of Eatin’ brand)

Directions

In a small bowl, mix the yogurt and chipotle. Cover and refrigerate until ready to use.  In a medium bowl combine the ingredients for the salsa and set aside.

Heat a large skillet over medium high heat.  Add the oil.  When the oil is hot, add the onion and garlic.   Cook 6-7 minutes stirring occasionally until the onion begins to soften.  Sprinkle the turkey with salt and pepper.  Increase the heat to high and add the turkey to the skillet.

Cook 6-7 minutes until the turkey begins to brown and is no longer pink in the center.  Add chili powder, cumin, cinnamon stick, and cook 2-3 minutes until the spices become fragrant.

Reduce heat to medium-low and add diced tomatoes, broth, and black beans. Stir occasionally. Add flax and cover. Simmer for 35-45 minutes on low heat.  Stir in the spinach and cook 1-2 additional minutes until the spinach wilts.

Serve hot with shredded cheese, chipotle topping, salsa, and chips.
